Fermentation At controlled temperature of 26/28?C for 15 days. Pumping-over every 6 hours for 10 minutes

Maturation For 18 months in 225 litre oak barriques and for 3 months in bottle

Bottling Wine protected with nitrogen, Natural cork 49x27 mm

Analytical data Alcohol 13,50%, total acidity 5 g/l tartaric acid, residual sugar 2 g/l

Tasting notes Deep ruby red colour with garnet nuances, intense scent of ripe fruits with spicy notes; mellow, full taste, with elegant, well-structured tannins; rich, harmonious and round flavour

Food Matching Roast red meat, game, mature and tangy cheeses. Sipping wine
