Growing Area and Vineyard Profile

The Classico area of the Sant’Ambrogio comune hills.

Vineyard aspect: South and southeast

Average altitude: 250-300 metres.

Soils profile: Predominantly clay and chalk.

Training System and Planting Density

Guyot and pergola trentina at 3,000 vines/hectare.

Average age of producing vines: 24 years

Number of buds: 16

Yield per hectare 100 quintals

Harvest Period and Method

Mid third of October. Manual harvesting.

Wine Production After hand-harvesting, the grapes are de-stemmed and crushed, followed by the traditional 6-7 day maceration on the skins. The wine is kept in steel until pressing off, then completes malolactic fermentation, followed by maturation in 33- and 50-hl oaks cases.

Service: When and How Serve at cool room temperature

Can be cellared several years.
